I made some amazing guacamole yesterday. The problem I face over here in Europe is, there is no good tortilla chip worth dipping in anything. They’re all too thick, too soft, stale, over flavored, too many additives and perspectives or an awesome combo of all above. So I decided to make matters into my own hands, bought a small zucchini from the market downstairs, and proceeded to try out two methods which worked equally well.
1) Make a vegan egg white, using 1 tsp. ground flax, and 1/8 cup water, mix to combine and give it 2 minutes to thicken. then batter the zucchini slices (thickness to your liking), roll in bread crumbs and place on a wire rack in a baking pan. Bake for 10-20 minutes until they look done, and are crisp (this all depends on how thick you cut it).
2) The second way, is instead of using the ” egg white” mixture, just use some soy milk, or regular milk and then proceed with the same steps from there.
These were so good, and went perfect with the taste of the guac. One small Zucchini should feed two as a start, or one hungry individual, such as myself.

Man I’ve been holding my breath for so long. New on arrival at Williams-Sonoma. That store is the ultimate. I mean, who else sells poffertjes turning sticks, a.k.a long wooden chopsticks  for 12.95$ ?? I think they’ve covered everything

butter nutMaking your own nut better is as simple as, 1, 2. There isn’t even a step three, just put stuff in and mash it.
What I like best about this method, is you can mix nuts to bring together different flavors that you can’t find on the store shelf. This time I tried almond and hazelnut, truly delightful for my taste buds. The mortar and pestle have become my new close friends, for making garlic into a paste, fresh pesto’s,  and the nut butter. It takes only 2 minutes to do this all by hand but the taste is so much more rewarding than from a jar.

I can only fall a sleep with the windows open these days. I wish I never feel alseep and woke up in Detroit this morning. Getting on that return flight was dumb for a list of reasons; I suppose I have to get to Amsterdam somehow. I prefer the city at night, free of sweat, making the world glow.
